How to substitute ground beef in Tacos!

Quinoa Kidney Bean Tacos

Going vegan doesn’t mean you have to miss out on tacos – Just replace the beef with this delicious Mexican flavored quinoa!  

Everyone loves Tacos!

This is a great recipe to make a vegan version of everones favourite mexican dish! I use it as a substitute for the taco seasoned simmered beef. The quinoa is really great for that since it has that “meaty” texture similar to ground beef. I made this before and even carnivores enjoy this variation!

The seasoning i use is homemade and actually quite simple: I use chili powder, cumin, ground chipotle peppers, veggie stock, garlic and onion powder and some sugar and salt.

So without further ado, here is my vegan taco filling recipe:

How to substitute ground beef in Tacos!

A great substitute for the usual simmered beef Taco filling.

 80 g red quinoa
 120 g kidney, pinto or black beans
 100 g sweet corn
 1 onion
 Jalapeños
 10 ml olive oil
 1 tsp salt
 1.50 tsp cumin
 2 tsp chili powder
 1 tsp garlic powder (you can use one or two garlic cloves instead)
 80 ml water

Boil water in a pot and cook the quinoa for about 10minutes until tender. Dice the onion.

Heat up a medium sized pan and add the olive oil. When its hot, add the onion and cook until soft.

Add the quinoa, corn, beans, Jalapeños and spices to the pan and let simmer for 5minutes.

Serve with your favourite side and sauce!

(I usually use soft tacos, lettuce and avocado and vegan creme fraiche)
